I've heard mixed reviews about sitemaps.

Should I include one on my sites or not?

If I were to do so, I would just have it link to the main sections on my sites (would that or would that not be a good idea.?).

So for all the SEO GURU's that hang out here... What's the latest scoop / advice on this?

do you do entire sitemaps?

I do them when i first launch a site, for me at least it gets it indexed faster, even before i have started building back links. after that i let google find the rest of the pages on its own unless it looks like google is having problems. My sitemaps are usually for 300 - 500 pages.

I'm sometimes torn when there is an easy sitemap generator plugin for a script, but it doesn't cover the rest of the site. What's the scoop on partial sitemaps?
